Garlicky Greens

Quick & easy side dish that adds some greens to your plate


Some days are better than others when it comes to getting in your veggies! This is a super easy side dish you can throw together in less than 10 minutes to add some greens (and all the goodness that comes with it) to your plate.


Any dark leafy green works here, but you can also use this same recipe and method to cook most veggies on the stovetop - broccoli, string beans, shredded Brussels sprouts are some of my other go-to's. I love to add mushrooms to the leafy greens, but get creative and add anything your family enjoys eating. You can't go wrong here.

Ingredients:

  • 1 Bunch Swiss chard (or kale, spinach, escarole, etc), roughly chopped

  • 2 Cloves garlic, minced

  • 8oz (1 Pack) Mushrooms, sliced or chopped

  • 2 Tbsp olive oil

  • 1 tsp salt

Directions:

  1. In a large skillet, heat olive oil and add in mushrooms (or whatever veggies your adding in)

  2. Saute until softened, about 5-7 mins

  3. Add in garlic and saute for another 1-2 minutes until fragrant

  4. Add in leafy greens and salt. If the greens don't all fit in your pan, add half and let them cook down then add the remaining greens

Note: For small babies, make sure to finely chop the greens after cooking!
