Herb Crusted Cod

Bright herbs and citrus bring this flaky white fish to life

[Serves 2]


Ingredients:

  • ¾ - 1lb wild cod

  • ⅓ cup almond meal

  • ½ cup finely chopped herbs (dill, parsley, cilantro)

  • 1 lemon, zest and juice (plus more for serving)

  • 1-2 cloves of garlic, peeled and minced

  • 2-3TBSP olive oil

  • Salt & Pepper


Directions:

  1. Preheat oven to 400 degrees

  2. Pat cod dry and season both sides with salt and pepper

  3. In a small bowl, combine almond meal, herbs, lemon juice & zest, garlic and olive oil to form a paste-like mixture. Season with salt and pepper to taste.

  4. Coat fish (top and sides) with the herb mixture

  5. Bake for 20-25 minutes or until fish is cooked through and flakes easily

  6. Serve with lemon wedges
