Bright herbs and citrus bring this flaky white fish to life
[Serves 2]
Ingredients:
¾ - 1lb wild cod
⅓ cup almond meal
½ cup finely chopped herbs (dill, parsley, cilantro)
1 lemon, zest and juice (plus more for serving)
1-2 cloves of garlic, peeled and minced
2-3TBSP olive oil
Salt & Pepper
Directions:
Preheat oven to 400 degrees
Pat cod dry and season both sides with salt and pepper
In a small bowl, combine almond meal, herbs, lemon juice & zest, garlic and olive oil to form a paste-like mixture. Season with salt and pepper to taste.
Coat fish (top and sides) with the herb mixture
Bake for 20-25 minutes or until fish is cooked through and flakes easily
Serve with lemon wedges
