Juiciest Grilled Chicken Thighs

The only grilled chicken recipe you'll ever need


This marinade is so versatile - use any herbs you have on hand (or omit, it will still be delicious!) - and the longer you marinate, the juicier and more flavorful the chicken will be.


I love putting this together while my kids nap so it's ready to go at dinner time. It also works if you throw it together right before cooking. This is the ultimate no stress recipe! Likewise, if you don't have a grill this works great in the oven or cast iron pan.

Ingredients:

  • 1-2lbs Boneless, skinless chicken thighs

  • 1/4 Cup olive oil

  • 1 lemon

  • 1 Clove garlic, minced

  • 2 Tbsp dijon mustard

  • 1/2 Cup fresh parsley, finely chopped

  • Kosher salt

  • Ground black pepper

Directions:

  1. In a large bowl or gallon size ziplock bag, combine juice from one lemon, olive oil, minced garlic and dijon mustard

  2. Whisk until combined and then add salt & pepper, to taste.

  3. Taste the marinade following this step to make sure the ratio is to your liking

  4. Add chopped parsley and combine

  5. Add the chicken thighs to the bowl or bag and toss to make sure all of the chicken is coated in the marinade. Cook right away or cover and refrigerate until you are ready to cook!

  6. If grilling, prepare the grill on Medium High. Cook chicken thighs for 5-6mins per side, or until an internal thermometer reads 165 degrees

  7. If cooking inside, my favorite way to cook chicken is to sear and bake:

    • Heat a cast iron or heavy bottomed skillet on medium high heat. Simultaneously, preheat the oven to 400 degrees

    • Once the pan is very hot, add chicken thighs and cook for 4-5 mins per side without disturbing, so they get a nice crisp crust

    • After the second side is nice and brown, transfer pan to the oven and cook for an additional 8-10 minutes, or until an internal thermometer reads 165 degrees
