Lemon Dijon Salmon

This easy sauce goes perfectly on almost everything!

This lemon dijon sauce goes incredibly well on almost any protein. The best part about salmon is that it doesn't need to marinate. Throw the dressing together, pour it over your fish and it's ready to go in the oven or on the grill. It comes together fast and is PACKED with flavor. I don't think my family has eaten salmon any other way in years and I'm confident it will soon become a favorite in your home too!

Ingredients:

  • 1lb salmon

  • 1/4 Cup olive oil

  • 1 lemon

  • 1 Clove garlic, minced

  • 2 Tbsp dijon mustard

  • 1/2 Cup fresh dill, finely chopped

  • Kosher salt

  • Ground black pepper

Directions:

  1. Preheat oven to 400°F

  2. Pat salmon dry and place on parchment paper on a baking sheet

  3. In a small bowl, combine juice from one lemon, olive oil, minced garlic and dijon mustard

  4. Whisk until combined and then add salt & pepper, to taste.

  5. Taste the marinade following this step to make sure the ratio is to your liking - add more olive oil if it is too tangy or more lemon & mustard if you like it spicy

  6. Add chopped dill and combine (the dill should make the dressing a bit thick so it can hold on to the salmon)

  7. Pour over salmon

  8. Bake for about 20-25 minutes until the salmon is cooked through (use a fork to check that the center of the fish is opaque)
