Quinoa & Squash Turkey Burger

One meal burger with all the nutrients your little ones need!


This is the perfect make ahead freezer meal for your kid's lunch or dinner. They freeze and reheat easily so you can defrost one burger and feel confident knowing your kids are getting all the nutrients they need in a few small bites!


These burgers are packed with protein, fiber, iron and Vitamin C. The best part of combining all this goodness into one burger is not having to think of anything else to serve with it!

Ingredients:

  • 1 lb ground turkey

  • 1 Cup butternut squash, mashed

  • 1/2 Cup cooked quinoa

  • Large handful spinach, finely chopped

  • 1 egg

  • 1/4 cup shredded cheddar cheese

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp thyme

  • 1/4 tsp dired oregano

  • Kosher salt & ground black pepper, to taste

  • 2 Tbsp avocado oil

Directions:

  1. Preheat oven to 375°F

  2. Prep the butternut squash: Peel a medium butternut squash and then cut in half. Drizzle with olive oil and place cut side down on a baking sheet lined with parchment paper (you will only need half for this recipe). Bake in the oven for 30-40 minutes, until the squash is soft to the touch. Once cooled, scoop out the flesh and mash with a fork

  3. Cook quinoa according to package instructions

  4. In a large bowl, combine mashed butternut squash, cooked quinoa, spinach, egg, cheese and spices until well combined

  5. Add in the ground turkey and combine with your hands and then form into patties (Note: Keep a bowl of warm water next to you. The burger mixture can be very sticky and it is easier to form patties with wet hands)

  6. Heat a cast iron pan over medium heat, add avocado oil and then cook burgers 4-5 mins on the first side. Once browned, flip the burgers and cover the pan until cooked through (Internal thermometer should read at least 165°F)
