Southwest Turkey Burgers

Whip these up and throw them on the grill for a quick and easy weeknight dinner!


Now that we are officially in summer, I am all about grilling. It is easy, delicious and the best part - requires minimal cleanup. These burgers are also great in a pinch because you can mix and match the ingredients with whatever veggies or herbs you have on hand. This combo was a perfect accident on one of those nights and has since become a staple in our house!


Ingredients:

  • 1 lb ground turkey

  • 1 red bell pepper, chopped

  • 1 red onion, chopped

  • 1 handful cilantro, chopped

  • 1 egg (optional, but helps hold the burgers together)

  • 1 clove of garlic, minced

  • 1 TBSP cumin

  • Salt and pepper to taste


Directions:

  1. Take your meat out of the fridge to come to room temperature while you chop the veggies

  2. Mix all ingredients in a large mixing bowl until combined (I do this with my hands). Form into 3-4 patties

  3. Grill for 20-25 mins, flipping halfway through (or until your thermometer reads 165°F)

  4. If you don’t have a grill, preheat your oven to 425°F and heat a large oven safe skillet on medium-high heat. Drizzle with olive oil and then place burgers in the pan. Cook for about 5-7 minutes on each side and then transfer the pan to the oven for another 15 minutes (or until your thermometer reads 165°F)


Enjoy with avocado, hot sauce, sliced tomato, raw onion. Eat on a bun or over a salad - the options are endless!
