A whole food, no sugar-added option to satisfy all of your nostalgic PB&J cravings
Peanut butter and jelly is my ultimate comfort food. On rice cakes, on pancakes, in smoothie form or cookies, I would eat it all day if I could. There has been such a big movement toward healthier, natural nut butters but what about the jelly?! This super easy recipe gives you a whole food, no sugar added jelly option to satisfy all of your nostalgic cravings.
Ingredients:
2 cups frozen berries of your choice
Juice from one lemon
2TBSP cup chia seeds
Directions:
In a small saucepan, add frozen fruit and lemon juice
As it heats, mash with a wooden spoon until you get a mushy/jam-like consistency
Add chia seeds and stir
Remove from heat and let stand until cool
Store in a sealed jar in the fridge for up to a month
