Sweet and Spiced Cauliflower

Incredibly flavorful side dish the whole family will love


Middle-eastern inspired, this incredibly flavorful cauliflower will make people think you've spent hours in the kitchen. The make-ahead spice mixture can be put together as early as the night before, so when it comes time for cooking all you have to do is toss in the cauliflower and throw it on a baking sheet. Minimal work, minimal cleanup, maximum flavor!


TIP: While this dish is not actually spicy, I know many kids may be turned off by the flavors. Leave a handful of cauliflower florets out of the mixture and bake plain (or with some salt, pepper and garlic powder) on the side of the baking sheet.

Ingredients:

  • 1 Cauliflower, cut into florets

  • 4 Tbsp olive oil

  • 3 Tbsp honey

  • 3 Garlic cloves, grated or minced

  • 3 Tbsp lemon juice

  • 1 Cup cilantro, finely chopped

  • 3 tsp sweet paprika

  • 2 tsp ground cumin

  • 1 tsp fine salt, or more to taste

  • Optional: Whole milk greek yogurt or Labne for serving

Directions:

  1. Preheat your oven to 400 degrees

  2. In a large bowl (big enough to fit all of the cauliflower florets), combine the olive oil, honey, garlic, lemon juice, cilantro, sweet paprika, cumin and salt

  3. Add the cauliflower florets and toss to cover completely with the spice mixture OR cover and refrigerate if you are prepping in advance

  4. Transfer mixture to a baking sheet and bake for 25-35 minutes until the florets are tender and lightly charred

  5. Top with more cilantro and if using, serve over greek yogurt or labne
