Sweet and citrusy salad dressing that packs in better-than-bottled flavor!
I love making a homemade salad dressing (or two!) for the week to add variety to what can easily become a boring desk lunch salad. This recipe was created by accident with simple ingredients I had on hand and blended together to create a creamy, sweet and citrusy flavor that will take any salad up a notch.
You can also drizzle this on grilled veggies for a fresh and easy summer side dish!
Ingredients:
Half yellow onion, chopped in big pieces
¼ cup olive oil
¼ cup apple cider vinegar
1 lemon, juiced
1 TBSP honey
1 heaping TBSP dijon mustard
1 heaping TBSP dried basil
Salt & pepper to taste
Directions:
Add all ingredients to a high speed blender or food processor and blend until smooth. Dressing should have a somewhat creamy consistency from the blended onions.
Taste and adjust seasonings (honey, salt, pepper) to taste.
