Thai Chicken Lettuce Wraps

Veggie-packed, Thai inspired lettuce wraps the whole family will love


This is another super flexible recipe. Almost all of the sauce ingredients are pantry staples you should have on hand, and the veggies can really be anything left in your fridge. I love including cabbage because it adds a nice texture and a lot of volume to the dish, but anything works!


My kids get really excited about making their own little "sandwiches" so this hands-on dinner is always a big hit! Getting your kids involved in cooking, serving, and putting together their own meals helps to increase interest in the food and often leads to more consumption!


Ingredients:

  • 1lb ground chicken

  • 1 Large bell pepper, finely chopped

  • 1/2 Large green cabbage, thinly sliced

  • 8 ounces sliced mushrooms

  • 2 Tbsp Olive Oil

  • 1/4 Cup rice vinegar

  • 1/4 Cup soy sauce

  • 1 Tbsp sesame oil

  • 2 Tbsp creamy peanut butter

  • 2 tsp ginger, peeled and freshly grated (or 1 teaspoon ground ginger)

  • 1 Tbsp honey

  • 1 tsp garlic, minced

  • Kosher salt & ground black pepper, to taste

  • 8 large lettuce leaves (butter or iceberg lettuce)

  • 3-4 scallions, chopped (for garnish, optional)

  • 3-4Tbsp salted peanuts (for garnish, optional)


Directions:

  1. Heat 1 Tablespoon of cooking oil in a skillet or saute pan over medium-high heat.

  2. Add the ground chicken, salt and pepper and cook for about 7-10 minutes, breaking it up into small pieces with a wooden spoon. Once fully cooked, set aside in a small bowl and drain the pan

  3. Add the remaining Tbsp of oil, bell peppers, cabbage, mushrooms and more salt & pepper to taste and cook until softened (about 10 minutes)

  4. While the veggies are cooking, whisk the vinegar, soy sauce, sesame oil, peanut butter, ginger, crushed red pepper, honey, and garlic together until smooth.

  5. Add the chicken back into the skillet and pour the sauce over the entire dish mixing well

  6. Add more salt and pepper to taste, then continue to cook for about 5-7 minutes (or until everything is warm and the sauce begins to slightly thicken).

  7. Garnish with chopped green onions and peanuts

  8. Serve with large lettuce leaves and rice
